Meatless meals made easy
I’m going to take my time this month to share my love of a few new meatless products that Wegmans recently has come out with.
A few weeks ago my parents came to visit me for the day. As every time they visit, we made a stop at Wegmans because they don’t have one where they live and they think it’s just the greatest place.
As we were making our way around the frozen food section, my dad yells to me, “Hey Jules, look at this!” and pointed to a freezer full of meatless chicken, pork and beef products. I dug through the varieties and said, “Dad, you found the mother load.”
The products are called Don’t be Chicken, Don’t be Piggy and Don’t have a Cow. The chicken products include breaded nuggets and breasts and grilled-style strips and breasts. The pork product is sausage style crumbles and the beef products are beef style crumbles and strips.
So far, I have tried the chicken nuggets and breaded breasts and the beef style crumbles. The nuggets and breaded breasts are by far the best tasting meatless chicken products I ever have had.
The beef crumbles are a great meat substitute for the tacos I love to make on a regular basis.
The chicken products I have tried so far are very easy to make, but they do take a little time, since you put them in the oven and not the microwave.
Preheat the oven to 425 F and heat for 7 minutes on each side and your chicken is ready to go.
The beef was even faster. I just heated it in a skillet with 2 tablespoons of water for a few minutes until heated through and it was ready.
For the nuggets, I like to make about six and cut them in half. I put the pieces on a wrap, add some shredded Daiya dairy-free cheese and douce with hot sauce, wrap it up and enjoy.
I have made the breaded patties two different ways. First, I cook them and top them with shredded Daiya mozzarella cheese, pop it in the microwave for 30 seconds to melt the cheese and you’re done.
Or, do the same thing, but add a few spoonfuls of marinara sauce between the chicken and the cheese and pair with some pasta and you have a delicious chicken-free parmesan dinner.
As I mentioned before, the beef crumbles are great in tacos, but a few nights ago I made chili for the first time and used the crumbles and it turned out really great.
1/2 bag of beef style
2 tablespoons water
1/2 can of kidney beans
1/2 can of pinto beans (I like the kind in the chili sauce)
1/2 cup chopped onion
1/2 packet of chili
1 8 ounce can of tomato sauce
You can add more tomato sauce if you like a thinner chili. I also add about 1/2 tablespoon of chili powder, red pepper and cayenne pepper to mine because I love the heat.
Put crumbles with 2 tablespoons of water in a pot over medium heat until heated through. Add remaining ingredients and cook until hot.
