Christmas is on its way, so who doesn’t need even more cookie recipes?

You might have been invited to a cookie exchange party, or thinking of giving cookies or other homemade treats as gifts this year? I know I am!

Even if you’re not a fan of the sweets, there also are other edible options – perhaps something savory or salty – or a combination of flavors?

Edible gifts always are a hug hit, weather they are for children or adults.

Here is a super easy recipe for peanut butter cookies that I made for a recent cookie swap that I attended.

Peanut butter cookies

1 cup peanut butter

1 cup sugar

1 teaspoon vanilla

1 egg or one flax egg

If using a flax egg, grind flax seeds to use one tablespoon flax meal and mix with three tablespoons of water.

Place in the refrigerator for 15 minutes to 1 hour to allow mixture to set. Heat oven to 325 degrees.

Combine all ingredients in a bowl and using an electric mixer, mix well until a dough is formed.

Roll dough into balls about 1 to 1 1/2 inches in diameter and place on a cookie sheet. Bake for 15-17 minutes.

You can use creamy or crunchy peanut butter for this recipe, depending on the consistency and texture you are looking for.

This recipe will make about two dozen small cookies or a dozen and a half larger cookies.

I am not too big into sweets, but I really like these.


1 cup flour

1 1/2 cups nuts (walnuts, pecans, etc.), finely chopped

2 1/2 tablespoons sugar

1 teaspoon vanilla

1/4 pound butter, softened or non-dairy butter

Pinch of salt

1 cup powdered sugar

Preheat oven to 300 degrees.

Mix dry ingredients in a large bowl.

Add remaining ingredients and mix with your hands. Form the dough into balls about 1 1/2 inches in diameter and place on a cookie sheet.

Bake for 35 minutes.

Roll cookies in powdered sugar before they cool completely.

When cooled, dust with sugar again.

If you prefer salty snacks, try a party mix. This type of treat is just as welcome to your guests or gift recipients as cookies are. These mixes can be made with anyone’s personal favorites – there are endless combinations to create. Amounts of ingredients will vary on how much you intend to make, so I’m just listing a few of my personal favorite items to mix together.

Trail mix

Small pretzels, plain or chocolate covered

M&M candies


Peanuts or mixed nuts

Chex cereal

Cheez It crackers

Popcorn or caramel corn

Dried fruit pieces (pineapple, apricot, etc.)

Sunflower and-or pumpkin seeds


Sesame sticks

Choose your ingredients, mix together and put into festive holiday containers, tins or bags to give as gifts.

You also can coat or sprinkle your ingredients with dark, milk or white chocolate, peanut butter or caramel.
