Spring is soon coming. Finally! Winter is for skiing, sledding, building snowmen and having snowball fights. But it is not fun to work in. I would like to say thank you to all the farmers who work in this miserably cold weather.

I know from being a farm girl that it is not fun to work in it but anyone who farms has to have a love and passion for it. So, thank you, farmers for what you do.

Coming in from the barn, working in this miserably cold weather it is always nice to sit down and have a meal of spaghetti with zucchini and cheese.

Spaghetti with zucchini and cheese

375 gram packet of spaghetti

4 tablespoons butter

2 tablespoons olive oil

1 onion chopped

3 garlic gloves, crushed

1/2 teaspoon dried chili flakes

2 cups grated zucchini (3 medium zucchinis)

Juice and zest from 1 lemon

1/4 cup chopped parsley

1/2 cup grated parmesan cheese

Cook spaghetti following packet instructions.

Drain well to and return to pan. Keep hot.

Meanwhile, heat butter and oil together in a large frying pan on medium.

Saute onion, garlic and chili 2 to 3 minutes, until onion is tender (be careful not to burn garlic).

Add zucchini, juice, zest and parsley. Cook, stirring 1 to 2 minutes. Season to taste.

Serve topped with Parmesan cheese
