Did you know that October is cheese month? The American cheese society created the first ever American cheese month in October 2011 to recognize and raise awareness of the quality and diversity of American cheese to support and promote well-made cheese, local foods, family farms, traditional cheese making methods and sustainable production models, and to help generate funding for the American cheese Education Foundation, which educates people about the art and science of artisanal and speciality cheese.
Instead of serving candy at Halloween, why not offer a healthy food, like cheese?
10 ounces broccoli, chopped
1 pound butter
1 roll of Ritz crackers
Several slices of Velveeta cheese
Cook broccoli. Melt Butter. Crush crackers and mix in the melted butter. Put half of the cracker butter mix on bottom of dish. Then put a layer of 1/2 of the cooked broccoli, followed by a layer of cheese, then the other 1/2 of broccoli, followed by a layer of cheese and finally topping with the other 1/2 of the cracker mix. Bake at 350 degrees for 30 minutes. Put it in a 2-quart casserole dish.
Cheesy cauliflower soup
1 medium cauliflower head, broken into florets
1 medium carrot, shredded
1/4 cup celery,chopped
2 1/2 cups water
2 teaspoons chicken bouillion granules
3 teaspoons butter
2 tablespoons all purpose flour
3/4 teaspoon salt
1/8 teaspoon pepper
2 cups milk
1 cup cheddar cheese, shredded
In a large saucepan, combine the cauliflower, carrot, celery, water, and bouillion. Bring to a boil. Reduce heat; cover and simmer for 12 to 15 minutes or until vegetables are tender (do not drain).
In another large saucepan, melt butter. Stir in the flour, salt, and pepper until smooth. Gradually add milk.
Bring to a boil over medium heat; cook and stir for2 minutes or until thickened. Reduce heat. Stir in cheese until melted. Stir into the cauliflower mixture.
Yields 8 servings (about 2 quarts). Enjoy and happy Halloween!
