Every year in January, many people make up a New Year's resolution. Some of their resolutions might be to lose weight, get married, find a boyfriend or girlfriend, find a job, pass a drivers license test, attend college, among many other goals.
A farmer's resolution might be to have a better harvest this year or a higher milk production.
My New Year's resolution for my dairy princess activities is to travel more than 4,000 miles and to give a dairy promotion at every school district in the SUN Area.

So far I have traveled about 3,400 miles with my dairy princess activities and I have visited three schools. I have one more school promotion coming up in mid-January.
This year I talked to the Selinsgrove field hockey team about the importance of drinking low fat chocolate milk after workouts and games. The team's goal this year was to win the state championship. The team did not make it to the state championship, but they ended with a great season only losing two games, which was to the two teams that competed for the state championship title.
My New Year's resolution for you is to get your three servings of dairy every day.
Here is a recipe for those New Year's Eve parties:
Baked mashed potatoes
4 large potatoes (about 2 pounds) peeled and quartered
1/4 cup milk
1/2 teaspoon salt
2 tablespoons butter or margarine, melted and divided
1 egg, beaten
1 cup sour cream
1 cup small-curd cottage cheese
5 green onions, finely chopped
1/2 cup crushed butter-flavored crackers
Cook potatoes until tender; drain. Place in a large bowl. Add Milk, salt and 1 tablespoon butter; beat until light and fluffy. Fold in egg, sour cream, cottage cheese and onions. Place in a greased 1 1/2 quart baking dish. Combine the cracker crumbs and remaining butter; sprinkle over potato mixture. Bake, uncovered at 350 degrees for 20 to 30 minutes or until crumbs are lightly browned. This yields 4 to 6 servings. This can be made ahead and refrigerated. Sprinkle crumbs on top just before baking.
