Early mornings find Tim Healey starting up the fire to prepare for another day of cooking at Roadside Ribs and BBQ, the eatery he and his wife, Steph, own along Route 220 just east of Jersey Shore.
"It's a lot of long hours, but it's definitely worth it," Steph said.
The couple opened the business April 10, just in time to take advantage of the warm weather months when they expect customers to be frequenting their establishment. The menu includes pulled pork barbecue, pulled chicken and boneless rib sandwiches. Those with heartier appetites can sit down for full meals: boneless ribs, full rack of ribs and chicken barbecue. Side dishes include cole slaw, baked beans, macaroni and cheese, and garlic mashed potatoes.

Tim noted that they have kept to the same menu as Clem's Ribs and BBQ, which was formerly located at the site.
"We don't use a smoker," Tim said.
And, all meat is wood-fired.

"We burn with white oak wood," Steph said. "It's a mild smoke flavor."
Tim added that they serve up Baby Back Ribs, which are more tender than St. Louis Ribs. Natural gas workers who hail from places such as Texas and Louisiana where ribs are a menu favorite have been pleased with their meals, according to the couple.
"You know you're doing all right when the gas workers come back," Steph said. "They know their ribs."
Customers can enjoy meals on the small deck attached to the restaurant. Many patrons call ahead for take-out orders.
"When we have nice days, we are busier," Steph said. "This is definitely a summer business."
They like the location along a busy highway.
"We are less than 10 miles from the city," Tim said.
The couple said they are happy to be running their own business. They formerly owned and operated Cellini's of Williamsport, a sub and sandwich shop near Lycoming College. The phone number for Roadside Ribs & BBQ is 570-398-7077.
