A member of the baking and pastry arts faculty at Pennsylvania College of Technology recently earned the Certified Food Service Educator credential from the Foodservice Educators Learning Community.
Chef Monica J. Lanczak, instructor of baking and pastry arts-culinary arts, completed the course Principles and Methods of Teaching for Foodservice Educators and met the skills and standards established for the CFSE credential.
The intensive, 12-week course and credential are sponsored by the Foodservice Educators Learning Community. It includes learning theory, curriculum development, instructional design and course assessment, practical examples of structuring labs and lectures, teaching special needs students, lesson-plan development, and shared best practices of classroom management.
"I am already making changes to my courses to improve teaching and learning," Lanczak said. "My priority has always been to provide the best possible learning activities for my students. This course has provided me with a wealth of information that covers the scope of a successful classroom-learning environment."
Lanczak has taught at Penn College for 18 years and is a recipient of the Excellence in Teaching Award, one of the college's Distinguished Teaching Awards. She spent 16 years training and working nationally as a pastry chef.
Her last professional chef position was executive pastry chef for the Stouffer Austin Hotel in Austin, Texas. She earned a bachelor's degree from Carlow College (now Carlow University).
