Anyone looking for an easy treat to make that is seasonal, delicious and on the healthier side? Look no further. This yogurt parfait with fresh cut apples tastes like fall.
As someone who is diagnosed with Achalasia Type 2, a rare swallowing disorder that affects my esophagus, I try to stick to softer foods and liquids to ensure I am fueling my body. While much about Achalasia is not known, some researchers think that the disorder is possibly related to degeneration of the nerve cells in the layers of the muscles of the esophagus, not allowing food to pass properly through the food pipe into the stomach, according to Johns Hopkins Medicine. Consuming things yogurt, cottage cheese, mashed or pureed foods, blended smoothies and soups, allows me to be sure that food is entering into my stomach. That's where this delicious parfait comes in.
Even if you are someone that doesn't need to be on a soft-food diet, this is worth a try. It is high in protein, light on the stomach and filled with the flavors of the season.
Apple Almond
Yogurt Parfait
1 cup of vanilla Greek yogurt, one preferrably high in protein
1 apple, peeled and diced
Cinnamon
Granola
Justin's Maple Almond Butter
First, grab a bowl for your creation. This is a yogurt parfait that you can really adjust how you like. Then, add in your vanilla Greek yogurt. I typically use one that is high in protein and low in carbohydrates with no added sugars. If you want to add more than one cup of yogurt, here is where you would add that.
Chop up your apple how you like. You can use any kind of apple. I prefer to use Granny Smith. I typically peel mine and then dice it into bite-size pieces. I add that directly on top of the yogurt in the bowl.
Then, if you're feeling fancy, you can add a dash of cinnamon. You can go light-handed on this because the other toppings will give the parfait plenty of flavor.
I then take a small spoonful of Justin's Maple Almond Butter and drizzle it on top. This is the step that I stop at, as I cannot have large chunks of granola. But at this point, if able, add any type of granola that you like to give the parfait the full affect.
When taking bites, be sure to get all of the layers of flavor. It will feel like fall in a dish.
